Sesame Sweeties
I’ve got a seriously delicious alternative to packet sesame seed squares—perfect for a nutritious mid-morning snack in your little one's lunchbox (or for you with a soothing herbal cuppa).
Packed with seeds, coconut, and honey, these bites keep your cherubs fuelled for longer, helping to stabilise blood sugar levels so they can focus in the classroom without the dreaded ‘hangry’ meltdowns or hyperactive bursts!
Ingredients
Makes 8-10
1/2 cup sesame seeds
1/3 cup honey
2 tbsp sunflower seeds
2 tbsp tahini
1/2 cup sunflower seeds (to be ground)
1/8 tspn salt
1/4 cup currents
1/2 cup unsweetened coconut, plus extra to garnish 1 tspn vanilla extract
Method
Grind sunflower seeds in a blender to make a fine powder.
Add all other ingredients and combine until mixture sticks together.
Rolls into small bite sized balls and roll in coconut.
Pop in an airtight container and store in the freezer, ready to bring out for school lunch boxes any day of the week.
