24 Hour Yoghurt Recipe!
Enjoy this delicious 24 hour yoghurt recipe, one of our favourite healing foundational recipes in the GAPS protocol or for anyone wanting a delicious, gut healthy yoghurt!
Within 24 hours, nearly all the lactose and casein have been consumed by the bacteria in the culture, meaning that many with a dairy intolerance can tolerate this ferment. In just one cup of this yogurt there are about 708 billion beneficial bacteria!, 50 times what you would get through a standard probiotic capsule.
Ingredients
2 litres organic, non-homogenised milk (just source the best quality you can find)
Yoghurt starter (you can purchase here)
Method(s)
Wash all of your equipment well with boiling water and allow to air dry
Thermomix
Place milk into TM bowl and cook 40 mins/80C/speed 3
Cool the milk down to 37C, you can sit in a cool water bath to speed up the cooling time
Add the yoghurt starter and stir on speed 3 to combine (make sure your milk is definitely cooled for this step, otherwise you will kill the starter)
Pour into jars and then place in your fermenting device that will be keeping it at around 37 degrees for 24 hours
Transfer to the fridge for 6 hours to set.
Store in the fridge for up to 2 weeks
Stove top
Heat milk on the stove over a low heat, using a thermometer to bring the milk to 80 degrees
Turn the milk off as soon as it is at 80, if you let it boil this will effect the taste of your yoghurt
You can try switching the stove on and off and keep the milk at 80 degrees for 40 minutes, this will give you thicker yoghurt as water evaporates. It is fiddly without the thermomix so it is ok to skip this step.
